Whoever said Valentine’s Day Meals had to be “adult only?” Why not make a meal the whole family will enjoy, that’s stealthily low-carb and wholly delicious? Serve it right in the cast iron skillet to the delight of young and old.

CarbSmart and Susie T. Gibbs bring you another round of BLC (Budget Low Carb) with the challenge to feed a family of 4 for $10 or less. The entrée which is a great one-pot-wonder certainly comes in under $10. But we played a little fast and loose with our budget this month because of the special occasion—going beyond it a bit to add a decadent low-carb dessert to dinner.

My Low Carb Lemon Chicken is a hearty roasted chicken stew with “radish potatoes,” mushrooms, onions and kalamata olives in an olive oil mustard sauce. Delish!

And don’t forget Dana Carpender’s incredible ginger snap cookies as a base for the cheesecake. It makes a nice break from typical nut crusts.
