Preparation Method

  • 10 ounces corned beef — shredded
  • 1 1/4 tablespoons Dijon mustard
  • 2/3 cup sauerkraut — unwashed squeezed very dry
  • 3 cups shredded Swiss cheese
  • 1 tablespoon caraway seeds
  • 3 eggs — beaten
  • 1 cup heavy cream
  • 1 teaspoon onion — grated
  • 1/2 teaspoon dry mustard

Preheat the oven to 375 degrees. Spray a pie plate or quiche dish with nonstick spray.

Fill the pie plate with the corned beef. drizzle the mustard over the corned beef and toss the beef lightly to distribute the mustard evenly. Top the beefwith the sauerkraut, then the cheese. Mix the caraway seed, eggs, cream, onion, and dry mustard; whisk to blend well. Pour the egg mixture over the other ingredients in the pie plate.

Bake for 40-45 minutes, or until a knife inserted in the center comes out clean.

Remove and let stand for 5 minutes before serving. Served with dollops of 1,000 island dressing, if desired.
