Preparation Method

  • 4 boneless skinless chicken breasts
  • 2 cups sliced mushrooms
  • 4 slices muenster cheese
  • 2 tablespoons olive oil

Place the olive oil in a skillet and turn to coat the bottom of the skillet completely.

Pan fry chicken breasts over medium heat about 20 minutes, or until the chicken is thoroughly cooked and the juices run clear. When the chicken is done, remove it from the pan and set it aside.

Saute the mushrooms in olive oil and pan juices. Remove the mushrooms from the skillet and set aside.

Return the chicken breasts to the olive oil and place sauteed mushrooms on top of the chicken. Finally, place a slice of muenster cheese on top of each chicken breast. Cover the pan with a lid and continue cooking until the cheese is melted.
