Mix is so easy to make, just place eggs, cottage cheese, butter and water in bowl, stir, add dry mix and yeast and place in oven to rise for 45 minutes. Bake for 45 minutes and enjoy! You will need:
- 3 large eggs
- 3/4 cup water
- 1 cup small curd cottage cheese
- 1 Tablespoon butter
Coat a 1-1/2 quart round casserole, or a standard size 9" x 5" loaf pan with non stick cooking spray.
In large round microwave-safe bowl, place eggs, cottage cheese, water and butter. Stir with spoon or whisk until well mixed. Heat on high for ONLY ONE minute or until cottage cheese is warm (not hot) and butter is beginning to soften. Stir in dry bread mix slowly until well blended. Sprinkle yeast packet in and stir to mix well. Spoon into casserole or loaf pan. Place bread pan in oven (center rack). Turn oven on to 200� for just one minute to warm. TURN OVEN OFF and let bread rise for 45 minutes. Turn oven on to 350 � and bake bread for 45 minutes (or until golden brown). Let bread cool for 15 minutes. Remove from pan, slice and enjoy. Makes 16 - 1/2" slices, 3 net carbs per slice. Refrigerate or freeze leftovers. Great toasted too!
Variations:
Makes super "herb" breads- try these:
- Add 1 Tbl dried dill weed and 1 Tbl minced onion for wonderful "dilly" bread, or
- Add 1/4 cup parmesan cheese powder, 2 Tbl dried chives, or
- Add 1 Tbl dried basil, 1 Tbl olive oil, 1/2 Tbl dried garlic powder (for Italian style).
For bread machine:
Spoon 1 Tbl of oil into bottom of bread machine pan. After mixing ingredients, spoon into bread pan and set your bread machine according to directions for "Rapid Bake" (usually 2 hours) or whatever settings allow a full rise cycle but ONLY ONE KNEAD cycle. Machines may vary.
