In the United States eggs are traditionally a breakfast food, but I like eggs just about anytime. And I like eggs just cooked just about any way you can think of: scrambled, deviled, fried, poached, hard-boiled … any way but raw. Eggs are quick, they’re easy, they’re cheap, and they always seem like comfort food to me. Eggs for dinner are particularly good when you’re crunched for time or for when the food budget for the week is shot.

For the most part, I tend to scramble eggs. There’s a couple of reasons why. (1) I always miss toast when I have fried eggs, but don’t miss is when I have scrambled eggs. (2) Since the items you can add to scrambled eggs are almost literally endless, scrambled eggs offer you infinite variety.

Tonight’s dinner offers a quick, inexpensive meal that is utterly satisfying.

Here’s this evening’s menu:

  • Comfort Food Omelet
  • Fried Tomatoes
  • Fresh Honeydew With Sweetened Blueberries

Helpful Hints:

Rather than pay through the nose for ham that is already diced (or sliced, for that matter), I put a small to medium-sized boneless ham every so often. I cut some of it into thick slices to broil as a main dish, some of it into thin slices for roll-ups, and dice some of it. Then I slip all of it into individual portion freezer bags and put it into the freezer, where it is ready at a moment’s notice.

If you think an egg-based meal must have some type of bread, use one of the low-carb bread mixes below. I like to bake up some low-carb bread, slice it, and keep it in the freezer for the infrequent times that I want a slice. I also make low-carb muffins and freeze them individually so that I can thaw them one at a time as they are wanted.

Here’s the shopping list for the meal. You may very well already have some of these things on hand:

  • finely diced ham
  • bacon drippings
  • 5 eggs
  • heavy cream
  • butter
  • shredded cheddar cheese (or shredded cheese of your choice)
  • grated Parmesan cheese
  • 1 green onion
  • 1 large tomato
  • honeydew
  • fresh or frozen blueberries
  • salt
  • pepper
  • low carb bake mix
  • granular Splenda (to taste)

Here’s the game plan:

Prepare the fruit first. Put it into individual serving bowls, cover it with plastic wrap, and put it in the refrigerator until you are ready to serve the fried tomatoes and eggs.

Set the table before you begin preparing the fried tomatoes and eggs.

Preheat the oven to 200 degrees or “Warm” on your oven dial.

Prepare the fried tomatoes according to the recipe directions below. Put the fried tomatoes on an ovenproof plate and put them in the oven to keep warm while you cook the eggs.

Prepare the eggs according to the recipe directions below. Divide the eggs between two dinner plates, add the tomatoes to the plates. (Don’t forget to turn off the oven.)

Place the plates on the table, then get the fruit out of the refrigerator and take it to the table as well.

Sit down to a well-deserved, relaxing meal.

And, finally, here’s the recipes:

Fried Tomatoes Recipe

  • 1/4 cup low carb bake mix
  • 1/4 cup Parmesan cheese
  • 1 large tomato
  • 1/4 cup bacon drippings
  • salt (to taste)
  • pepper (to taste)

Preheat the oven to 200 degrees, or to “Warm” on your oven dial.

Combine the low carb bake mix, Parmesan cheese, salt, and pepper in a shallow bowl. Whisk the ingredients with a fork to combine them thoroughly.

Slice the tomato into 1/4-inch slices. Coat each slice on both sides with the combined dry ingredients, patting the dry mix into the tomato gently. Place the coated tomato slices onto a clean, ovenproof plate.

Put the bacon drippings into a large, heavy skillet over medium high heat. When the drippings are hot, transfer the tomato slices from the plate into the skillet. Continue cooking the slices, turning at least once, until both sides are golden brown.

Return the cooked tomato slices to the plate and place them in the oven to keep warm while you cook the eggs. (See the recipe above.)

Serves 2.

Comfort Food Scramble Recipe

  • 5 eggs
  • 1/4 cup heavy cream
  • 2 tablespoons water
  • 1/4 cup finely diced ham
  • 1 teaspoon butter (or more, if needed)
  • 1/4 cup sliced green onion (green part only)
  • 1/2 cup shredded cheddar cheese (or shredded cheese of your choice)
  • salt (to taste)
  • pepper (to taste)

Break the eggs into a large bowl. Add the cream, water, diced ham. Whisk the ingredients with a fork, combine them thoroughly.

Place the butter in the same skillet in which you fried the tomatoes. When the butter is melted, pour the scrambled egg mixture into the skillet. Cook the eggs, stirring them frequently with a spatula, until they are almost completely cooked. (The tops of the eggs will still be moist and slightly shiny.)

Sprinkle the green onions and the shredded cheddar cheese over the eggs. Cover the skillet and remove it from the heat. Let the eggs sit for 3 to 4 minutes, or until the cheese is melted.

Serve immediately, using salt and pepper at the table to taste.
