Low Carb Strawberry-Avocado Salad with Citrus Honey Vinaigrette

Ingredients

Units Scale
  • 1 small avocado
  • 4 ounces strawberries (approximately 4 large strawberries)
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon lemon juice, freshly squeezed if possible
  • 1/4 teaspoon sugar-free honey, or a few drops of liquid stevia
  • a few strips orange zest

Instructions

  1. Mix the last four ingredients (this can be done up to 3 days ahead of time). Cut the strawberries into slivers. Cut avocado in half, pit, and discard peel, then cut into 6-8 slices.

Arrange avocado and strawberry slivers on salad plates and drizzle with the dressing. Serve immediately.
