Many low-carbers tend to rely too heavily on broccoli, asparagus, and cauliflower. They omit most legumes because the assumption is that beans are too high in carbs. And in fact, many are too high. Green beans however, are just fine for the low-carber who is staying on plan and listening to their body. The Technicolor Green Beans recipe is just such a recipe. It is low in carbs, Gluten-Free, delicious, and it pairs well with any type of entrée.

Ingredients

  • 3/4 pound green beans, trimmed and halved
  • 3/4 pound wax beans, trimmed and halved
  • 1/4 red bell pepper, cut into thin strips
  • 2 tablespoons grass-fed butter
  • Salt (to taste)
  • Pepper (to taste)

Instructions

  1. Place the green beans, wax beans, and red bell pepper strips in a steamer basket, and steam over medium high heat for 7-9 minutes, or until crisp tender.
  2. Drain thoroughly and season with butter, salt, and pepper to taste.
  3. Serve immediately.

Notes

VARIATIONS
If you don’t have any red bell pepper in the house, you can substitute green, orange, or yellow peppers. You can also omit the bell pepper altogether and just serve the beans. It’s colorful either way.
