Preparation Method

  • 10 ounces frozen asparagus spears
  • 1 1/2 teaspoons Dijon mustard
  • 3 tablespoons wine vinegar
  • 2 tablespoons olive oil
  • 3 tablespoons water
  • 1/2 teaspoon dried parsley salt and pepper to taste

Cook the asparagus according to package directions; drain thoroughly.

Combine the mustard and vinegar in a small bowl. Add the oil, water, parsley, salt, and pepper; mix well. Combine with asparagus in a large bowl; stirring well to coat the asparagus completely.

Chill several hours, tossing occasionally.
