Recipe By : Diana Bauer: Celebrate Low Carb

Apples tend to be pretty high in sugar so I try to avoid them as much as possible. However, Low-Carb jicama slices (zapple) soaked in a fruit-flavored drink mix, give me the same textural mouth feel and crunch as an apple without all the sugar of an apple.

Jicama has become very popular so finding it at your local supermarket shouldn’t be difficult. Many times you can find it pre-cleaned and sliced. If you can find it that way, go for it!

Preparation Method

  • 1 large jicama — peeled and diced into 1/2-inch pieces
  • 2 packets sugar free apple cider drink mix
  • 2 cups President’s Choice Apple Cider Burst drink (available from WalMart)

Place the cubed jicama into a crockpot. Combine the packets of apple cider drink mix with 2 cups of the Apple Cider Burst and stir to dissolve the drink mix. Pour over the jicama.

Cook on low for 4 hours. Drain and cool.

Per Serving (for the entire recipe): 250 Calories; 1g Fat (2.1% calories from fat); 5g Protein; 58g Carbohydrate; 32g Dietary Fiber; 0mg Cholesterol; 26mg Sodium. Exchanges: 3 1/2 Grain(Starch).
