Ingredients

  • 1 cup spring onions, sliced (green onions)
  • 4 strips bacon, cooked crisp and crumbled
  • 1 cup cheddar cheese, grated
  • 5 eggs
  • 3/4 cup cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon garlic powder
  • 3 plum tomatoes, thickly sliced
  • 1 teaspoon Italian seasoning
  • 1 green pepper, optional

Instructions

  1. Spray a pie plate or quiche dish with nonstick spray.
  2. Preheat the oven to 350° F.
  3. Cook the bacon until crisp, then drain, cool, and crumble. Spread the sliced onions in the pie plate. Top with the crumbled bacon and green peppers(if desired), and cheese.
  4. Put the eggs, cream, salt, pepper, and garlic powder in the blender. Blend until well mixed. Pour the egg mixture over the ingredients in the pie plate. Carefully arrange the tomato slices on top and sprinkle with herbs.
  5. Bake at 350° F for 30 to 40 minutes, or until a knife inserted in the center comes out clean.
