This Zesty Spinach Salad with Bleu Cheese Low-Carb Gluten-Free Recipe is super yummy and very simple to assemble. If you prefer a dairy-free version, simply omit the bleu cheese. You can also add another protein to it to make it main dish salad. Whichever options you choose, this salad is sure to be a crowd-pleaser.

Ingredients

  • 1 package prewashed spinach, stems removed
  • 4 ounces sliced mushrooms (1/2 container)
  • 8 tablespoons crumbled bleu cheese (to taste)
  • 4 slices bacon, cooked crisp and crumbled or 4 to 6 tablespoons real bacon crumbles
  • homemade low-carb croutons

Instructions

  1. Arrange the salad greens on a plate, or, if you are taking this salad to work, in a large bowl with a tightly fitting lid.
  2. Sprinkle all the remaining ingredients of the salad greens in the order in which they are listed above, ending with the crumbled bleu cheese.
  3. Add salad dressing if you are eating at home, but not if you are taking this salad along to work. It’s better to add the salad dressing immediately before you eat the salad, so take the bottle of dressing along with you or put an appropriate amount in a separate container to carry along.

Notes

You only need to remove the stems from the spinach if they bother you. They bother me, so I do. Up to you.

Use the croutons sparingly as they do contain carbs.

VARITATIONS
If you don’t like blue cheese, use your favorite cheese or leave the cheese off completely for a dairy-free version.
