Dear “A Mom” How is your son doing?
My husband is diabetic and I have the 500 Low Carb recipes by Dana Carpender. If you did not
win it, you can get it very inexpensively USED. Search Ebay, Amazon, and Thrift Books.com
I recently bought the “Glycemic Low Diet Cookbook” that includes Dana Carpender as a co-author.
Also “used”. the receipes are wonderful. Lots of good ideas for desserts, too. SimplySharon
Thanks, Sharon — I’m glad you like my books! I should add: Any public library should be able to get them. If they don’t have them in their collection, interlibrary loan lets any public library get any book in any other public library in the US. I have never been charged for this service. Libraries rule.
Of course, my mom was a librarian. Might bias me a bit…

Where can I purchase this ice cream?
Stephanie:
If you are talking about the Breyers CarbSmart Ice Cream you can check your local supermarkets. It should be in the freezer section.

I was referred to this by my brother and am looking forward to receiving the e-magazine. What is your take on coconut sap as a sweetener? Thank you.
Thank you for your kind comments, we appreciate it.
Although we enjoy other forms of coconut (flour, flakes, oil), we do not believe coconut “sugar” is a viable sweetener. We believe you should stick with stevia or Splenda.
just wanted to say hi and wish all the best of luck with their low carb diet and congradulations to those who have succeeded.
Is coconut oil sold in regular groceries stores? I remember seeing a product that was in solid form (white) and it looked like shortening in about a pint size jar. I am also wondering where to locate rye flour.
Some of my local groceries carry coconut oil, some don’t. Kroger does, and they’re the biggest national food chain; do you have one near you? All my local health food stores have it.
Yes, it’s solid and white — if it’s below 76 degrees. Above that it melts, but panic not, repeated melting and hardening doesn’t harm the quality of the oil.
BTW, if your coconut oil stays solid to higher temperatures it has been hydrogenated. Bad ju-ju, to be avoided. Extra Virgin or Virgin Coconut Oil will be fine, of course, but they have a distinct coconut aroma. There are more refined coconut oils, generally just labeled “coconut oil,” which are very bland, and can be used where the coconut flavor wouldn’t fit. I generally use Swad brand, which I get at my local international grocery; I believe it’s Indian. And it does melt above 76, so it may be refined, but it’s not hydrogenated.
Mary Anne, you can find Organic Extra Virgin Coconut Oil in your local stores or online. We have a list of stores that sell it here. Always look for the extra virgin coconut oil. Although solid and white, you may occaqsionally find brown flecks in it which is normal.
While low carb is fine . Some of us have metabolic syndrone . I cannot have processed foods. much. I have to cook my wholesome foods myself. Through a lot of research I have found a vast majority of web sites that have recipes and information that I can use. Because I also have diabetes I cannot eat a large amount of carbs.. I make sure that I have whole grains. a lot of oatmeal in my cooking breads..I do very well. I monitor my blood sugar frequently. So that I stay active and healthy..
Carol: you may want to look into the research being done with respect to whole grains and the possibility that they are contributing to your metabolic syndrome, diabetes and blood sugar values. One place you may want to start is the book Wheat Belly by Dr. William Davis or the reviews of the book by Dana Carpender and Amy Dungan.
Just a thought.
Could you please tell me why you disconntinued the Carb Smart Chocolate Ice Cream? That was the best stuff that there was on the market! I just loved it, it had the best taste and the texture that there was in ice cream. If you have more products out there I would like to know where I can get them! I live near Erie, Pa, in a small town called Girard,Pa and the only grocery store that we have close to us is Giant Eagle, they use to carry alot of diabetic things but not anymore and all grocery stores are getting that way. I would really like to see more of your products out there on the counters for us diabetics!
Dianne:
We are not the manufacturer of the CarbSmart Ice Cream.
We own the trademark for “CarbSmart” and licensed it to Unilever for their Breyers line.
We list the contact info for Breyers here: https://www.carbsmart.com/breyers
I understand how you feel about the chocolate Breyers product and other diabetic-friendly products that are hard to find. You can always come to CarbSmart.com to start your search for other low carb foods.

I just saw chocolate Breyers carbsmart ice cream at Walmart yesterday in Benton, KY. I too had noticed that the chocolate disappeared from the coolers. I think it is a marketing decision – which product sells more. Ask your grocery store manager to carry the chocolate, he/she may carry it if you request it.
I am estatic in finding your website~~~~looks like what I’ve always been searchin’ for…gonna hang in foreverrrrrrrrrrrr~~~~can ya stand it. hopefully??
LOVE YA
Hey, we live but to serve.
My daughter was diagnosed with Type 1 diabetes last week and I am LOST! I’ve run out of ideas to cook, and am just so overwhelmed. HELP!
Hi Angie,
I’m sorry to hear about your daughter’s diagnosis. That’s always a scary thing for a parent. The good news is that it doesn’t have to be difficult or overwhelming. One good article to consider reading is here: https://www.carbsmart.com/will-a-low-carb-diet-help-a-type-1-diabetic.html
Also, an amazing book for both types of diabetics is Dr. Bernstein’s Diabetes Solution. You can find it on Amazon, Kindle, Nook, etc. It’s a great book and will help you tremendously.
Best wishes!

I was fortunate to have a ketogenic diet, i.e. low carb, adequate protein and high fat, recommended to me by my functional medicine M.D. eight months ago. As a result I quickly lost the (minimal) weight that I wanted and, more importantly, my labs have improved. For me this is a lifestyle change, not a diet. The foods are very satisfying, hunger is none existent, and I have the energy I need to follow the recommended exercise regime of 30 minutes five times weekly…very doable. Am a retiree and I feel a new lease on life.
