Comfort is in the air, so break out the crockpot folks! Who doesn’t love a steaming bowl of Low-Carb meatballs (of any persuasion) cooked low and slow in the family slow cooker? Using the same basic ratio of primary meats and veggies, you can jazz up these meatballs to fit any cuisine.

Budget Low-Carb brings you flavors of Italy, Switzerland and China with our classic Italian Meatballs in Sauce (Yes, we cheated and went with sauce from a jar but feel free to hop over to our tried and true recipe for Easy Oven Roasted Marinara Sauce, you’ll be thrilled with rave reviews from the fam!), Swedish Meatballs, and Chinese Sweet n’ Sour Meatballs. Off the top of my head, I can think of a half dozen other meatball recipes to morph from the basics shown below. (Can you say, teriyaki?? Course you can!)

Everyone loves naturally Low-Carb meatballs and they are often a great way to get kids to “eat their veggies.” Finely chop spinach (frozen chopped spinach is so easy—but go organic, it’s one of the Dirty Dozen, mushrooms, kale, collards, carrots, cauliflower, the sky is the limit! Add them to the meatballs and poof! You’ve boosted their veggie consumption with stealth. Simmer in a flavorful sauce and you have nutrient-dense food at your fingertips. Make the meatballs large or small, it’s your game! Small ones work as appetizers and kid-sized portions, and larger meatballs take less time! Both taste sublime.
