This low-carb, gluten-free chili dip recipe came from my friend, Ray Whitson. When my son takes this to a party, the casserole plate always comes back empty and licked clean. It’s filling, satisfying and super delicious. The perfect dip for any party or gathering from Superbowl parties to book club meetings! Young or old, your guests will enjoy this quick and easy chili dip perfect for your favorite low carber.

Women beware. Consumption of this dish may cause you to grow hair on your chest.

Ingredients

Units Scale
  • 2 8ounce packages cream cheese, softened
  • 2 10ounce cans Dixie Chili (or any canned coney-type chili without beans)
  • 3 to 4 cups shredded cheddar cheese

Instructions

  1. Moosh (this term is so culinarily technical!) the cream cheese into the bottom of a medium-sized casserole or baking dish. I like to use one of my oblong Corningware casserole dishes, which is about 12″ x 8″.
  2. Pour the two cans of chili on top of the cream cheese and spread the chili around so that it is evenly distributed.
  3. Sprinkle the shredded cheddar cheese on top of the chili.
  4. Bake in a 350° F oven for 20 – 30 minutes, or until the cheese is melted and the entire casserole is hot.
  5. Serve with low carb crackers, tortilla chips, or pepperoni crisps. Slices of cucumbers or radishes are also good “dippers.”

Notes

VARIATIONS
If you want a little extra zing in your chili dip, you can add a few drops of hot sauce or chopped jalapeno peppers.
