The combination of eggs, ham, mushrooms, and spinach is an easy Easter recipe.

OK, so you’re not actually getting green eggs – you are getting ham, mushrooms, and spinach with your eggs so of course, your spinach is what’s green. You probably thought we were going to dye the eggs! No need to.

Ingredients

  • 1/2 medium onion, diced
  • 8 ounces sliced mushrooms
  • 2 tablespoons ham fat or bacon grease, or other fat for sauteing
  • 10 ounces frozen chopped spinach, thawed
  • 8 ounces cooked ham
  • 6 eggs
  • 1 cup creamed cottage cheese
  • 2 teaspoons spicy brown mustard, or to taste
  • 2 teaspoons prepared horseradish, or to taste
  • 1/2 teaspoon salt (or more or less, depending on how salty your ham is.)
  • 1/2 teaspoon pepper

Instructions

  1. Preheat oven to 325° F.
  2. Coat an 8″ x 8″ baking dish with non-stick cooking spray.
  3. In a big, heavy skillet over medium heat, start sauteing the onion and mushrooms. Use the edge of your spatula to break the mushrooms up into smaller bits. (This assumes that you bought your mushrooms sliced. If you bought them whole, might as well just coarse-chop them to begin with.)
    In the meanwhile, dump the spinach into a strainer in the sink, and press all the excess water out of it.
  4. Chop your ham medium-fine – bits maybe about ¼-inch.
  5. Crack the eggs into a mixing bowl.
  6. Add the cottage cheese, mustard, horseradish, salt, and pepper. Whisk it up.
  7. Okay, time to assemble: Stir the drained spinach and the ham into the onion/mushroom mixture, then spoon it all into the prepared pan. Spread in an even layer.
  8. Pour the egg mixture into the pan, and mess it around with a spoon just enough to make sure that the eggs are seeping all the way through the vegetable/ham mixture.
  9. Bake for 50-60 minutes until set. Cut into squares to serve.
