On March 24, 2023, we changed the title of this recipe from “Lower Carb Matzo Balls for Chicken Soup Passover Recipe (NOT KOSHER)” to “A Non-Kosher Recipe For Lower-Carb Matzoh Balls For Chicken Soup.

Ingredients

Units Scale
  • 3/4 cup crushed pork rinds choose 0 carb pork rinds
  • 1/4 cup Matzo Ball Mix
  • 2 extra large eggs
  • 1 egg yolk
  • 2 tablespoons canola oil
  • 1/4 teaspoon black pepper
  • 2 quarts sugar free chicken broth

Instructions

  1. Place matzo mix and crushed pork rinds in a deep bowl. Add everything else and mix well. Chill for about 1/2 hour.
  2. Remove from refrigerator, and make 12 little round balls. Put them back in the fridge, and keep chilled until you are ready to cook them.
  3. Bring the soup stock to boil, then add balls. When stock returns to a boil, turn down to a simmer, cover tightly, and simmer slowly for abut 45 minutes. I add my veggies and cooked chicken chunks the last 10 minutes.

  1. SOS…I need a carbquik recipe to make my own matzo. I cannot go with 22 grams every time I need or want a piece of matzo during Passover. Help!!

    • I’m afraid that CarbQuik is not kosher for Passover, since it contains baking powder. I’d try to come up with a low-carb matzoh, but I’m so WASPy I squeak when I walk. I’m not sure where I’d start. Do you have any recipes for homemade matzoh?

  2. How can you have a Passover recipe that isn’t Kosher? And with pork, yet! This makes no sense at all.

      As we state multiple times, this recipe is not Kosher for Passover, as it contains pork products. However, for those who do not observe Kosher dietary laws, it may be a tasty option to consider.

      • Actually, it says it is a Passover recipe that is not Kosher. My point is that you can’t have a Passover recipe that is not Kosher. Any recipe may not be Kosher, but ALL Passover recipes ARE Kosher. That’s the problem I’m having with how the heading was worded.

  3. This isn’t kosher for ANY time. All of my non kosher keeping friends enjoy the real version just fine. Insinuating that one can’t enjoy it unless it’s no longer a kosher version is pretty offensive.

        • J, as a cook, I’m curious: how would you use chicken? Grind it? I can’t see making chicken crumbs. One could make a big batch of chicken chips (crisped chicken skin) and grind them up, but that’s a lot of work. Please help me visualize what you have in mind.

          • To me it’s the same principle as making a meatball. So yes, ground chicken. But I personally eat it in its original form. Once a year. 😉

  4. One thing this has made clear (okay, clearer): We need more writers, and we need them from various cultures. If you are a Jewish low carber who likes to cook and write, please let us know! We’re hiring. For that matter, we need writers from across the cultural spectrum. Please help us broaden our base!

    • Heck, if you’re from any culture we do not have represented! We could use more African-American writers, Latino writers, Native American writers, Indian (ie from India) writers, you name it. Heck, given how old-line, East Coast WASPy I am, we could use some Southerners, some Southwesterners, you name it. Help us broaden our perspectives!
