This Company Cauliflower Casserole is perfect for the holidays. It’s Low-Carb, Gluten-Free, creamy, rich, and delicious. The best part, a little goes a long way. It doesn’t freeze well, so if you have leftovers, pack it up and send it home with your guests. They’ll love you for it! I like to keep a bit of the leftovers for myself because it tastes great for breakfast the next morning with a hot cup of coffee. It’s rather indulgent!

Ingredients

  • 5 cups fresh cauliflower, trimmed and cut into chunks
  • 2 cup sour cream
  • 1 1/2 cups grated cheddar cheese
  • 6 green onions, chopped (separate white and green parts)
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon pepper
  • 6 slices bacon, cooked crisp and crumbled

Instructions

  1. Cook cauliflower until tender but firm. Drain and chop into pieces about the size of hash browns.
  2. Mix together sour cream, 1 cup of the cheddar, white part of green onions, salt and pepper.
  3. Stir in cauliflower.
  4. Transfer to a greased baking dish and sprinkle rest of cheddar on top.
  5. Bake at 350° F for 20 minutes or until heated through.
  6. Crumble bacon on top and sprinkle on the chopped tops of the green onions.

Notes

Recipe can be doubled. Reheats well, but does not freeze well.
