Cranberry Walnut Brie Gluten-Free Low-Carb Appetizer

The Cranberry Walnut Brie low-carb appetizer recipe is not only a beautiful piece on the table but tastes just as luscious as it looks. Overflowing with color and crunch, this buttery low-carb appetizer recipe has a bit of a tang and pairs nicely with a nut-based cracker or something as simple as jicama, cucumber slices, or my favorite, a spoon.

Ingredients

  • 6 ounces fresh cranberries
  • 1/2 teaspoon stevia powder extract
  • 1 cup water
  • 1 large Brie wheel
  • 1 tablespoon grass-fed butter
  • 1/2 cup chopped walnuts

Instructions

  1. Preheat oven to 350° F.
  2. In medium saucepan, bring water to a boil. Add cranberries and boil for 10 minutes or until cranberries “pop.” Mix in stevia and set aside.
  3. Add butter and walnuts to sauté pan and toast until lightly browned.
  4. On a parchment covered baking sheet, arrange brie wheel in center. Pour cranberries over top, sprinkle with chopped walnuts and bake for approximately 15 minutes or until warmed and soft.

Notes

Variations
½ cup Swerve granular sweetener can be used in place of stevia.

Add orange juice and rind but expect an increased carb count.
