Kosher Low-Carb Cranberry Applesauce

A home-made lower carb applesauce with the added taste of cranberries and cinnamon. A Kosher treat for Chanukah or any time of the year.

Ingredients

  • 3 pounds Gala or McIntosh Apples peeled and cut into 1/2-inch thick slices
  • 1 cup Fresh Cranberries
  • 24 Tablespoons Swerve or other low-carb sweetener. Coconut sugar may be substituted for Paleo diets
  • 3/4 cup Water
  • 1 Cinnamon Stick
  • 2 Teaspoons fresh lemon juice

Instructions

  1. In a large saucepan, combine apples, cranberries, sweetener, water, and cinnamon stick and bring to a boil.
  2. Reduce heat; cover, and simmer, stirring occasionally, until apples are tender, 30 to 35 minutes. (If sauce begins to stick to the bottom of the pan, add 2 to 4 tablespoons more water.)
  3. Remove mixture from heat; discard cinnamon stick. Stir in the lemon juice.
  4. Serve warm or cold with Kosher Low-Carb Vegetable Latkes or Kosher Low-Carb Sweet Potato Latkes.
