Kosher Low-Carb Vegetable Latkes are a craveable holiday treat perfect for Thanksgiving or Chanukah. Serve with Kosher Low-Carb Cranberry Apple Sauce.

Serve hot with Kosher Low-Carb Cranberry Apple Sauce or Plain Greek Yogurt.

Ingredients

  • 1 cup Grated Parsnip
  • 1 cup Grated Zuccini
  • 1 cup Grated Carrots
  • 2 Eggs Beaten
  • Salt and Pepper to Taste
  • 1/2 cup or More Olive Oil for Frying

Instructions

  1. Place the grated vegetables in a large colander and squeeze out excess water.
  2. 
In a large bowl, mix grated vegetables with egg, salt, and pepper. Start with two eggs for every 3 cups of grated vegetables to bind the latkes. After frying a few, add more egg as binder only if necessary.
  3. 

In a large frying pan, heat oil over medium to medium-high heat. Flick a few drops of water into the pan; if it sizzles immediately, then the oil is hot enough to begin frying.
  4. Using a soup spoon, drop the mixture by rounded heaping spoonful into the hot oil.
  5. After a minute or so, press down with a spatula to flatten the mixture into a patty.
  6. Cook 2-3 minutes on each side until golden brown.

Notes

  • You may use any vegetable, or combination of vegetables, you enjoy in this recipe as long as you are able to grate them. Turnip also works very well.
  • The nutritionals will vary depending on the type of vegetables, number of eggs, and oil used.
  • Serve hot with Kosher Low-Carb Cranberry Apple Sauce or Plain Greek Yogurt.
