Apple-Herbed Leg of Lamb for Easter Dinner

Leg of Lamb is an Easter tradition! This special Easter recipe will take about 5 hours to prepare but it’s worth the wait. A little bit of sweetness will make this a recipe to remember forever.

Ingredients

  • 1/2 cup sparkling water
  • 1 packet sugar free apple cider drink mix
  • 1/2 teaspoon finely shredded lemon peel
  • 2 tablespoons lemon juice
  • 1 teaspoon glucomannon powder
  • 1 teaspoon dried rosemary
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 2 1/3 – 4 pound leg of lamb, sirloin half, boned and butterflied

Instructions

  1. For the marinade, stir together the sparkling water, apple cider drink mix, lemon peel, lemon juice, glucomannon powder, rosemary, garlic, salt, and pepper. Set aside.
  2. Place the lamb, boned side up, between two pieces of clear plastic wrap. Working from the center outward to the edges, pound lightly was a meat mallet until the lamb is approximately 1 inch thick.
  3. Place the lamb in a shallow dish. Pour the marinade over the lamb. Turn the lamb to coat it entirely, then return it to the bone up position in the dish. Cover the lamb and marinade with plastic wrap and place it in the refrigerator for at least 4 hours or overnight.
  4. Drain the lamb, reserving the marinade. Grill the lamb on an uncovered grill directly over medium coals for 15 minutes. Brush often with the reserved marinade. Turn the lamb and continue grilling until it reaches the desired doneness. (I recommend using a meat thermometer.) Continue basting with the reserved marinade, and allow 15 to 25 minutes more for medium doneness.
  5. Let the roast rest 10 minutes before slicing and serving.

Notes

This may be grilled ahead of time and kept warm or reheated.
