This Low-Carb, Gluten-Free Southwest marinade recipe will give you the taste made famous in the American southwest – Arizona, New Mexico, Utah, and Nevada. A little bit spicy but extremely flavorful. Perfect for chicken but can be used on fish or pork.

Ingredients

  • 1/4 cup olive oil
  • 1/4 cup gluten-free balsamic vinegar (verify your sources says gluten-free on the label)
  • 1 tablespoon garlic powder
  • 1 tablespoon chili powder
  • 1 tablespoon paprika
  • 2 teaspoons oregano
  • 2 teaspoons cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. In a large bowl, mix all marinade ingredients together.
  2. Store in the refrigerator for at least 1-2 hours or until needed.

Notes

  • When you are ready, coat 4-6 pieces of chicken breast in the marinade for 1-2 hours.
  • Grill or bake chicken at 400° F for 35-40 minutes.
