If you’re ok with a couple extra carbs in your healthy vegetable side dishes, you’ll want to try this Low-Carb Green Beans with Bacon recipe. Fresh green beans and cooked bacon strips will elevate your everyday green beans. This fresh low-carb dish is an excellent alternative to plain cooked green beans. If you don’t have fresh green beans then frozen green beans are fine.

Ingredients

  • 6 Strips bacon, cut into 1/4 inch pieces
  • 1/2 cup chopped pecans
  • 1/2 cup water
  • 2 pounds fresh green beans
  • Salt and pepper to taste

Instructions

  1. Fry bacon in pan over medium heat until no longer pink.
  2. Add pecans and continue cooking until bacon is crispy.
  3. Add the water, stir, then add green beans.
  4. Once the water starts to boil, turn heat down and cover the pan.
  5. Let simmer for about 15 minutes, until the beans are tender, stirring a few times.
  6. Remove from pan and place in serving dish.
  7. Season to taste and serve hot.
