This Low-Carb Gluten-Free Lemon Dijon Asparagus Recipe makes a fancy side dish in no time! The combination of lemon, Dijon mustard and almonds brightens up the flavor and adds a nutty, earthy finish.

  • 1 16ounce box frozen asparagus spears
  • 1 tablespoon butter
  • 1 tablespoon lemon juice
  • 1 tablespoon Dijon mustard
  • 2 tablespoons toasted sliced almonds
  • salt (optional)

Instructions

  1. Separate and thaw the frozen asparagus spears by running them under warm water. Shake the spears to eliminate as much as the water as possible.
  2. Melt the butter in a large skillet or frying pan over medium-high heat. Do not let the butter brown!
  3. Put the sliced almonds in the frying pan to brown, stirring them constantly until they are golden. Remove the almonds from the pan with a slotted spoon and set them aside.
  4. Put the thawed asparagus spears into the skillet or frying pan and cooking them, stirring frequently, until they are just crisp-tender. This will take 3 to 4 minutes.
  5. Add the lemon juice and Dijon mustard to the asparagus in the skillet and toss then asparagus to thoroughly coat it with the butter, lemon juice, and mustard, and everything is heated through.
  6. Put the asparagus on a serving plate or onto individual dinner plates. Spoon any remaining butter mixture over the asparagus and sprinkle each serving with 1/4 of the sliced almonds.
