Low-Carb Madeira Cake is made with almond flour where a Victoria sponge cake is made with regular flour. Low-Carb 
Madeira Cake has a denser texture. Madeira cake holds its shape when carved and iced, making it ideal for wedding cakes. It’s named Madeira cake because it used to be served with a glass of Madeira wine.

Ingredients

  • 2 cups almond flour
  • 8 ounces butter melted
  • 6 large eggs, separated
  • 3 tablespoons Truvia or sweetener to equal 3 tablespoons sugar
  • 2 tablespoons vanilla extract
  • 1 teaspoon lemon extract

Instructions

  1. Mix the almond flour, butter, egg yolks, sweetener, vanilla extract and lemon extract together in a bowl. If the mixture is stiff, loosen it up a bit by adding spoonfuls of warm water one at a time and mixing well.
  2. In a very clean glass bowl, whisk the egg whites until they are stiff.
  3. Fold the whisked egg whites into the almond mixture.
  4. Pour into a baking tin, and bake at 350ºF for 30-40 minutes until risen and golden.
