Charmoula is a marinade that is commonly used in Moroccan and southern Mediterranean recipes. It is made up of several different herb combinations including cilantro, paprika, and cumin. Cilantro has special properties for improving blood sugar regulation to fight insulin resistance and diabetes. Cilantro is also rich in quercetin, which is a powerful anti-inflammatory flavanoid that promotes cardiovascular health.

Ingredients

  • 23 medium zucchini
  • 1 medium eggplant
  • 1 Tablespoon Cumin
  • 2 garlic cloves
  • 1 bunch of fresh cilantro
  • 1 fresh lemon juiced
  • 1 1/2 teaspoons paprika
  • 1/8 teaspoon cayenne pepper
  • 1/2 cup extra-virgin olive oil
  • Sea salt and pepper to taste

Instructions

  1. Slice the eggplant and zucchini into flat slices and put into a bowl.
  2. Put all the spices into the food processor until it forms a sauce.
  3. Toss the veggies with the sauce until they are all coated.
  4. Let the veggies marinate for about 15 minutes.
  5. Heat up the gas BBQ or grill pan and cook on high heat for about 5 minutes on each side.
  6. Serve with your favorite grilled grass fed beef or lamb.
