Gambas al Ajillo (garlic shrimp) is a popular Spanish dish which has found it’s way to the US. It is principally found in the south and center of Spain. The primary ingredients consist of shrimp, garlic, and olive oil. Various regional variations abound. It’s often served in tapas bars as an appetizer all across the world.

Ingredients

Scale
  • 16 Large shrimp or prawns, shelled and deveined
  • 4 Tablespoons olive oil
  • 3 Cloves garlic, peeled and sliced thinly
  • 1 Hot red chili pepper, finely chopped or 1 dash chili powder
  • Salt & pepper to taste

Instructions

  1. Peel and de-vein the prawns, leaving the tails intact. Rinse and pat dry with paper towels.
  2. Heat the oil in a large frying pan over high heat.
  3. Add the prawns, garlic, chili and sprinkle lightly with salt.
  4. Stir or shake over a high heat for about 3-4 minutes, until the prawns are pink, taking care the garlic does not burn.
  5. Turn immediately into warmed, individual bowls, dividing the oil between the bowls.
