Simple Side Salad With Low Carb Croutons Recipe

Sometimes you just don’t feel like a hot side dish. For those times, a simple side salad with low-carb croutons is the perfect answer. I have chosen a Paleo bread for the croutons, which is all natural as well as low-carb and gluten-free. If you have a different bread you prefer, please feel free to use it.

Ingredients

Units Scale
  • 8 cups salad greens, prewashed
  • 1/2 cucumber, sliced and quartered
  • 8 cherry tomatoes, halved or quartered
  • 2 tablespoons chopped green onions
  • 4 slices bacon, cooked and crumbled
  • 1/2 cup low carb croutons
  • full fat salad dressing of your choice

Instructions

  1. Combine salad greens, sliced cucumbers, cherry tomatoes, and green onions in a large salad bowl and toss.
  2. Top with crumbled bacon and croutons.
  3. If you prefer a pre-dressed salad, top with the salad dressing of your choice and serve.

Notes
