Kosher Low-Carb Sweet Potato Latkes are a delicious holiday treat perfect for Thanksgiving or Chanukah. Serve with Kosher Low-Carb Cranberry Apple Sauce.

Ingredients

  • 3 cups grated sweet potato
  • 23 Eggs, beaten
  • Salt and pepper to taste
  • 1/4 Teaspoon ground cinnamon
  • 1/4 Teaspoon ground cloves
  • 1/2 cup or more olive oil or coconut oil for frying

Instructions

  1. Place the grated sweet potato in a large colander and squeeze out excess water.
  2. 
In a large bowl, mix grated sweet potato with egg, salt and pepper.
  3. Start with two eggs for every 3 cups of grated sweet potato to bind the latkes.
  4. After frying a few, add more egg as binder only if necessary.
  5. 

In a large frying pan, heat oil over medium to medium-high heat.
  6. Flick a few drops of water into the pan; if it sizzles immediately, then the oil is hot enough to begin frying.
  7. Using a soup spoon, drop mixture by rounded heaping spoonful into the hot oil.
  8. After a minute or so, press down with a spatula to flatten the mixture into a patty.
  9. Cook 2-3 minutes on each side until golden brown.
