Whether you are new to Southern-style greens or not, there’s nothing as filling as a Low-Carb Mess O’ Greens. The traditional method of cooking Southern-style greens uses a ham hock, a cut of meat from the hog’s lower leg to flavor the greens.

Ingredients

  • 1 bunch collard greens
  • 1 bunch turnip greens
  • 1 bunch mustard greens
  • 1 small onion, chopped
  • 2 cups water
  • 1 small smoked ham hock
  • 1 tablespoon Splenda
  • salt (to taste)
  • 1/2 teaspoon pepper

Instructions

  1. Boil the smoked ham hock or salt for 1 hour in water.
  2. Wash and remove the stems from greens. Tear the leaves into bite-sized pieces. Dice the onion into small pieces.
  3. Add the trimmed greens, diced onion, Splenda, salt, and pepper to the smoked ham hock and water. Cover and simmer the greens very slowly over medium-low heat until they are tender, about two hours.
