It’s all about the quality of the ingredients here. Very fresh, young asparagus, the best olive oil and garlic you can get, fresh lemon juice instead of bottled, good sea salt, fresh pepper.

Ingredients

  • 1 pound asparagus — the thinnest, newest asparagus you can find!
  • 3 tablespoons extra virgin olive oil
  • 23 garlic cloves, sliced or diced
  • 1/2 lemon
  • salt and pepper

Instructions

  1. Snap the ends off your asparagus where it wants to break naturally.
  2. Put the biggest skillet you’ve got over medium-high heat, and let it heat up for three or four minutes.
  3. Add the olive oil and garlic, slosh it around, then add your asparagus, in as close to a single layer as you can get.
  4. Sauté, turning everything over every minute or so, for just 3-5 minutes, or until the asparagus turns brilliantly green. Squeeze the lemon over it, salt and pepper, and toss it to coat, then serve immediately.
