With thirty chickens in the backyard, I can state with some authority that eggs are symbolic of spring in general and Easter in particular because that’s when the hens start laying again! If you have the refrigerator space, stock up on eggs while they’re cheap.

In particular, I sometimes see “medium” eggs – the small ones laid by the young pullets who have just started laying – on sale as cheap as fifty cents a dozen.

That’s a lot of nutrition for very little money, so stock up. I’ve kept eggs in the fridge for more than a month without problems.

They won’t be great for frying or poaching at that point, but they’ll be fine for quiche, casseroles, or hard-boiling.

Many of you will have leftover ham long about the end of the month, as well. So we thought we’d give you some ways to use up the eggs and ham, both.
