Green and red and purple and yellow, plus a gorgeous salmon-pink dressing. You’ll make a big hit at the party with this, but you’ll be really happy to have it with the same old Tuesday chicken.
- Yield: 8 Servings 1x
- Diet: Diabetic
Ingredients
- 4 cups shredded green cabbage
- 2 cups shredded red cabbage
- 1/3 cup diced green bell pepper
- 1/3 cup diced red bell pepper
- 1/3 cup diced yellow bell pepper
- 1/3 cup diced red onion
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 3 tablespoons white wine vinegar
- 1 tablespoon minced fresh dill weed, or a teaspoon dried dill weed
- 3/4 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 18 drops liquid stevia extract
Instructions
- Shred your cabbage – slice it thinly with a knife or food processor, rather than chopping it, it makes for a better texture. Throw the cabbage in a big mixing bowl. Dice the rest of the vegetables, and throw them in, too.
- Measure everything else, mix it all together, pour over the veggies, and stir till everything is evenly coated. Refrigerate for several hours before serving, to let the flavors blend.
