Ingredients

Units Scale
  • 6 medium-sized golden beets
  • 1 small red onion
  • 1 tablespoon minced garlic
  • Juice of 1 lemon
  • 1/4 cup extra virgin olive oil
  • 4 tablespoons rice vinegar
  • 1/2 cup feta cheese, crumbled

Instructions

  1. Steam beets for 25 minutes then peel and cut into small cubes.
  2. Slice the onion as thin as possible and then chop into smaller pieces.
  3. Mix oil, vinegar, lemon juice and garlic together in salad bowl then add remaining ingredients.
  4. Cover and chill 20 minutes prior to serving.

Notes

To reduce the carbohydrate count further, use raw apple cider or wine vinegar in place of rice vinegar.

Omit Feta cheese for Paleo and Dairy-Free options.

Variations
Shallots can replace the red onion for a bolder onion flavor.

Toasted pine nuts are a nice addition.
