Low-Carb Cauli-Mashed Faux-Patoes

Potatoes are never CarbSmart, especially on a low-carb diet. Since before Dr. Atkins launched the low-carb movement in the 1970’s, potatoes were forbidden.

But what do you do during the holidays or when you want the mouth-feel of traditional mashed potatoes? You substitute low-carb cauliflower for the high-carb potatoes in your side dishes.

Faux Cauli-Mashed “Potatoes” is the perfect low-carb potato substitute which you can serve for Thanksgiving, Christmas, or any time of the year.

Ingredients

Units Scale
  • 1 Medium head cauliflower
  • 1/3 cup heavy cream
  • 1 Tablespoon butter
  • 3 ounces Monterey Jack cheese
  • 1/2 Teaspoon minced garlic
  • 1/2 Teaspoon sea salt

Instructions

  1. Bring large pot of water to a boil over high heat.
  2. Meanwhile, chop cauliflower into small pieces.
  3. Boil on high heat for 6-8 minutes.
  4. Drain well and pat dry with paper towels.
  5. In a food processor, combine cauliflower with heavy cream, butter, cheese, garlic, and salt until done.
  6. Serve with butter.
