Ingredients

  • 1 head fresh cauliflower, florets separated
  • 2 cups hot pepper Monterey jack cheese, shredded and divided
  • 4 ounces cream cheese, softened
  • 1 cup sour cream
  • 1 1/2 tablespoons heavy cream
  • 1 4ounce cans green chilies, drained and chopped
  • 1/2 teaspoon garlic powder
  • 1/8 teaspoon black pepper
  • salt (to taste)

Instructions

  1. Steam cauliflower until tender, about 5-10 minutes.
  2. In a large mixing bowl, combine steamed cauliflower with 1 cup of the Pepper Jack cheese and the rest of the ingredients and mash together.
  3. Place the mixture into a buttered casserole or baking dish. Sprinkle the reserved cheese atop the cauliflower mixture.
  4. Bake at 350° F for 30 minutes or until cheese is completely melted and the casserole is heated through.
  5. Serve hot.

Recipe can be doubled. Reheats well.
