The great thing about salad is that it can be served before the entrée or as a side dish. Personally, I prefer it as a side dish especially when it’s got lots of yummy components. This Low-Carb Gluten-Free Simple Romaine Salad is just such a dish. It’s got lots of crunch so it adds a great deal of texture to your meal. The best part is that there endless variations for toppings.

Ingredients

Units Scale
  • 1 16ounce bag prewashed Romaine lettuce
  • 4 strips bacon, cooked and crumbled
  • 4 tablespoons toasted pumpkin seeds
  • 1/3 cup shredded Mexican blend cheese
  • salad dressing of your choice

Instructions

  1. Divide the Romaine lettuce between 4 salad plates.
  2. Sprinkle each salad with ¼ the cooked and crumbled bacon, ½ tablespoon of the toasted pumpkin seeds, and ⅓ of the shredded cheese.
  3. Top with your favorite salad dressing.

Notes

Nutritional Information does not include salad dressing.

VARIATIONS
For a bit more spice, try using cooked and crumbled pastrami instead of bacon.
Instead of pumpkin seeds, you can substitute roasted sunflower seeds or nacho flavored Just the Cheese
Monterey Jack or cheddar cheese can be used in place of the Mexican Blend cheese.
