My family loves dessert and the thought of foregoing it for the rest of my life is unacceptable. Enter my Low-Carb Gluten-Free Gelatin Parfait. It’s sweet, creamy, and refreshing. In short, it’s the perfect ending to any meal. You can have fun and switch out different flavored gelatins. If you’re Paleo, you can make your own flavored gelatin and substitute it for the boxed gelatin. Either way, it will become one your go-to favorites!

  • 2 small boxes sugar free gelatin (you choice of two different complimentary flavors)
  • 2 cups boiling water
  • 2 cups cold water
  • 1 cup heavy cream
  • 1/2 teaspoon unflavored gelatin
  • 1 teaspoon Swerve sweetener (optional)


  1. Make the gelatin according to the package directions.
  2. Chill the gelatin in shallow cake pans or casseroles. You want the gelatin to be about 1-inch thick or less.
  3. Whip the cream, adding the unflavored gelatin, which helps to stabilize it.
  4. If you prefer your whipped cream on the sweeter side, add up to 1 teaspoon Swerve and whip to incorporate.
  5. Cut the hardened gelatin into small squares with a sharp knife.
  6. Place about ⅛ of one the gelatins in each of four stemmed glasses or parfait glasses. I use four stemmed Martha Stewart tumblers that I got at K-Mart. They’re supposed to be used for water, but what the heck. They’re classy enough for my brood.
  7. Place a dollop of the whipped cream on top of the gelatin cubes.
  8. Put about ⅛ of the second gelatin flavor on top of the whipped cream.
  9. Add about ⅛ (and last of) of the first gelatin flavor on top of the second layer of whipped cream, and top it with the last of the second gelatin.
  10. Finish off with the last of the whipped cream.
  11. Place the parfaits in the refrigerator until it is time to serve them.
