A delicious and refreshing summer salad featuring summer watermelon that doesn’t break the carb bank. Perfect for those hot summer nights.

Serving Ideas: Serve with grilled shrimp or chicken. It’s delicious with shish kebabs also!

Ingredients

  • 2 cups watermelon, ice cold
  • 1/3 cup red onion, slivered
  • 1 large cucumber, sliced thinly
  • 1 cup feta cheese, crumbled
  • 1/2 cup kalamata olives, pitted
  • 1/2 cup Lemon Garlic Vinaigrette
  • 1/4 cup mint leaves, or fresh basil
  • salt and pepper

Instructions

  1. Seed and cube watermelon. Combine with onion, cucumber, feta and olives.
  2. Toss with homemade lemon vinaigrette. Season with salt and freshly ground black pepper.
  3. Stack and roll mint or basil leaves then make thin slices across the roll. This is called a chiffonade. Add to servings and enjoy.

Notes

Yes, watermelon is a higher glycemic fruit, so your mileage may vary in eating it. But I find by combining watermelon with lower carb veggies like cucumber and onions, that it gives you “watermelon satisfaction” and still keeps carbs at an acceptable level. One serving of watermelon feta salad comes in at only 12g net carbohydrate and combined with a lovely serving of protein, is a complete meal!

You won’t believe how delicious the combination of sweet, tart, crisp and salty is on your palate! What a great way to celebrate summer cucumber and melons. Oh and guess what? This salad rocks with cantaloupe too, for much fewer carbs!

Also, if you want to reduce the carbs, simply cut the watermelon back to 1 cup and add a second cucumber.
