But we played a little fast and loose with our budget this month because of the special occasion—going beyond it a bit to add a decadent low carb dessert to dinner.
My Low Carb Lemon Chicken is a hearty roasted chicken stew with “radish potatoes,” mushrooms, onions and kalamata olives in an olive oil mustard sauce. Delish!
Mini Low Carb Cheesecakes with Ginger Snap Crust Recipe can make the most hardened criminal smile and vow eternal gratitude. Who doesn’t love cheesecake topped with whipped cream and raspberries? For extra merit, you could visit our friend, Shannon K, for an absolutely super take on sugar free meringue that actually browns (aka brûlées)!
